Hi there. I was not checking above the final composer confirmation for any errors; basically after I installed the php7 there were still some extensions missing I guess. So i just installed the fallowing: sudo apt-get install php7.1-mbstring, sudo apt-get install php7.1-dom, sudo apt-get install php7.1-zip.
Run composer update and restart.
This fixed my problem. Thank you for your time!
