Are you running the watcher in homestead? I used to do that when I was first using grunt and compiling could take between 4 and 12 seconds due to VM performance and shared folders slowness. Running into my local machine solved that issue.

Whilst I use homestead, I am running gulp/watcher within PhpStorm on my local machine.
