On the projects I have work on, we always use the Resources ( https://laravel.com/docs/5.6/eloquent-resources ) or Fractal ( http://fractal.thephpleague.com/ or https://github.com/spatie/laravel-fractal ) for the fields in the json output.
This is very easy to customize.
