You might confirm that composer is loading the class files by checking the autoload files. Mine show up in the workbench vendor/composer location.

You show two composer.json snips, the first one looks off on the paths for the namespacing. The second is similar to what I'm using and is located in my workbench project folder.

As for the dump-autoload, I tend to do php artisan dump-auto in the root app as it will cycle through all of my workbench projects. You can still to do a single workbench from its directory with the composer dump-autoload, if needed.
