Depending on the old design and how much the change is to the new design, your idea sounds like it would work.
I might make a json for each record which includes the relationship, that would allow me to have a single record backup.
But, it really depends on how different the new db is and how complex the relationships are. I'm assuming it is very different.

Yes... the old DB is very different in comparison with the new one. So I think you're right, I'll go with make a json per record, I think it's going to be easier to perform what I need.
