Not sure if it is related the issue you are having. In artisan listing your route, you had PostsController for you delete method while you were assigning (in your route file) UsersController to the destroy method.
I would recommended installing the Chrome plugins called Postman, and try fire up the destroy method and see what response it gives you back.
